How can I change the existing custom field type?

At this time there is not a way to switch the existing field type to a different field type. You'll need to create the new field and perform an update by import to copy the data to the new field. If the new field type is compatible with the old type (ex. dropdown to picklist) you can map the existing field data from your exported CSV to the new field.
